The delegates experienced their
first full day of training on Monday in Palmer Commons. Prof. Susan
Gregory, head of EMU's hotel and restaurant management program, gave
an overview of the US casual dining industry. This was followed by
a panel discussion with three restaurant owners: Mike Roddy, Paesano's;
Roy More, Ashley's and Chicago Uno Grill (2), and Rois Sevvedes, Tower
Inn Cafe. Monday afternoon, Andrew Lawlor, Ross School of Business
faculty member and former owner of Detroit's London Chop House gave
a presentation on
formulating a restaurant strategy.
